PREHEAT OVEN: 400°
3 packages any flavor instant oatmeal
3/4 c. whole wheat flour
3/4 c. all-purpose flour
1/2 c. packed brown sugar
1 T. baking powder
2 t. cinnamon
1/2 t. salt
Blend together and add to dry ingredients:
3 egg whites or 2 whole eggs
1 2/3 c. milk
1/2 c. vegetable oil
1 1/2 c. chopped dates (optional...but good!)
If the mixture is too thin, stir in about 1/4-1/2 c. regular oatmeal.
Bake in Pam sprayed muffin tins for 15-20 minutes until risen and golden brown. Fill muffin tins about 2/3 full of batter.
