KFC Chicken

 The KFC Original Secret Chicken Recipe is the heart and soul of the KFC brand, concocted by Colonel Harland Sanders himself. Despite many attempts to decipher the secret blend of 11 herbs and spices, the official recipe remains a secret locked away in a vault in Louisville, Kentucky. However, this recipe will help you create fried chicken that gets pretty close to the real deal.

Ingredients:

  1. 2 cups all-purpose flour
  2. 2/3 tablespoon salt
  3. 1/2 tablespoon dried thyme leaves
  4. 1/2 tablespoon dried basil leaves
  5. 1/3 tablespoon dried oregano leaves
  6. 1 tablespoon celery salt
  7. 1 tablespoon ground black pepper
  8. 1 tablespoon dried mustard
  9. 3 tablespoons paprika
  10. 2 tablespoons garlic salt
  11. 1 tablespoon ground ginger
  12. 3 tablespoons ground white pepper
  13. 1 cup buttermilk
  14. 1 egg, beaten
  15. 1 chicken, cut up, the breast pieces cut in half for more even frying
  16. Expeller-pressed canola oil

Instructions:

  1. In a bowl, combine the flour and all the herbs and spices. This forms your coating mixture.
  2. In another bowl, mix the buttermilk and beaten egg together.
  3. Dip each piece of chicken into the buttermilk mixture, then roll them in the flour mixture. Repeat this process twice.
  4. Let the chicken pieces rest for 20 minutes. This helps the coating adhere to the chicken better.
  5. In a deep pan, heat your oil to 350°F (175°C). Ensure you have enough oil to fully submerge the chicken pieces.
  6. Fry the chicken pieces for 10-15 minutes, until golden brown and crispy. Remember to turn the pieces occasionally for even browning.
  7. Use a meat thermometer to check if the chicken is done – it should read 165°F (74°C) for breasts and 175°F (80°C) for thighs and wings.
  8. Once cooked, place the chicken pieces on a wire rack over a baking sheet to drain any excess oil.
  9. Let it cool slightly and then serve hot for that amazing fresh-from-the-fryer taste!n

 6 c apple cider and 1 cinnamon stick simmered for 5 min

add and simmer for 5 more min:

2 1/2 c pineapple juice

1/4 c honey

1/2 t nutmeg

3 T lemon juice

1 t grated Lemon peel

Float orange slices in it when served

Better Than Sex Cake Mama

Bundt pan.   350 degrees for 50 min


6 oz pkg of semisweet chocolate chips

3.4 c chopped pecans

4 eggs

1/2 c oil

1 t vanilla

1 box (4 serving size) instinct chocolate pudding

1 8 oz sour cream

Toss together the choc chips and pecans with 1 T Beat together 3 min then  

Becky's Sour Cream Cheesecake

 Becky’s Sour Cream Cheesecake              preheat oven 275 degrees, cook 70 min,          then turn oven off and leave in for 1 hour with door closed

 

Butter 11 inch springform pan, dust with mixture of ½ c. graham cracker crumbs,1 t. sugar, 1 t. cinnamon.  (If you want more crust, melt butter and add graham cracker crumbs and cinnamon and press in bottom of pan (finely chopped pecans optional) and bake in oven for 10 min prior to adding cheesecake mix)

 

Beat together 7 eggs and 1 ½ c sugar.

Break in 1 ½ lb of cream cheese and beat well

Add 1 ½ c sour cream, 3 T flour, 1 ½ t vanilla.

Beat until smooth and pour in prepared pan

 

 

 

 Cream puffs        400 degrees    Mama

Puffs:                              Vanilla Pudding:                  

1c. water                        ¾ c sugar.       1 egg or 2 egg yolks

½ c oil                              6 T flour            1 t vanilla

½ t. salt                            dash salt          2 T butter

1 c sifter flour                   2 ½ c milk

         

Chocolate Icing:                Boil water, reduce to low and add all of the other puff ingredients all at once

1 sq. or 2 ¾ t cocoa          Cook stirring vigorously until mixture leaves sides of pan and forms a compact 

1 T butter                           ball.   Remove from heat and cool.  Stir in eggs, unbeaten, one at a time. Beat 

1 c powdered sugar.        Mixture after each til glossy.  Spoon onto cookie sheet and bake.  Cool puffs, 

Dash salt                            cut open top and fill with pudding.  Replace top and ice.
